WThis is an easy version of a cocktail found on our latest drinks list. It's a large-volume premix that's bursting with essence of a Christmas time, making it excellent for a celebration. Any leftover syrup to use in breakfast cocktails, desserts, or to make more rounds of bikinis.

The Bikini Cocktail

Yields 10 servings

Ingredients for the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Premix (yields 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, as a garnish
Mandarin essential oil, to finish

Instructions

Making the Cordial: Combine all the ingredients inside a saucepan, heat until it reaches a gentle boil, agitating until the sugar dissolves. After that, turn off the heat and leave to cool down entirely. Decant to a sterilised bottle, seal keeping it chilled, it will last for about one month.

To make Cocktail Base: Pour the specified liquid ingredients into a large bottle, leave to sit for an hour, then filter it best through muslin, making it fully clarified.

When ready to serve: Pour 85ml from the batch mix to a mixing glass filled with ice, gently stirring carefully for about 60 seconds to cool it down. Filter into an frosted cocktail glass or similar, garnish with some cranberries and finish with a brief mist of the essential oil over the drink.
